Ingredients
For the Potato Dough:
-
2 cups mashed potatoes (leftovers work great)
-
1 large egg
-
1/2 cup all-purpose flour (more as needed)
-
Salt and pepper, to taste
For the Meat Filling:
-
1/2 lb ground beef or ground chicken
-
1 small onion, finely chopped
-
1 clove garlic, minced
-
Salt and pepper, to taste
-
Optional: a pinch of paprika or dried herbs for extra flavor
For Frying:
-
2–3 tablespoons vegetable oil or butter
Instructions
Prepare the Meat Filling:
In a skillet over medium heat, cook ground meat and chopped onion until browned and fully cooked. Add garlic and cook for 1 more minute. Season with salt, pepper, and optional spices. Let cool slightly.
Make the Potato Dough:
In a bowl, mix mashed potatoes with the egg and flour. Season with salt and pepper. The dough should be soft but not too sticky—add more flour if needed.
Form the Pancakes:
Divide the dough into 8–10 portions. Flatten one portion in your hand, add a spoonful of the meat mixture to the center, and gently fold and seal the potato around the filling. Flatten slightly into a patty.
Fry:
Heat oil or butter in a skillet over medium heat. Fry pancakes for 3–4 minutes per side, or until golden brown and heated through.
Serve:
Serve hot with sour cream, Greek yogurt, or a tangy dipping sauce. These crispy, savory pancakes are perfect for using up leftovers and delivering serious comfort food vibes!
