Ingredients

  • – 12 oz (340g) rotini or penne pasta

  • – 1 cup cherry tomatoes, halved

  • – 1 cup cucumber, diced

  • – 1/2 cup Kalamata olives, pitted and sliced

  • – 1/2 cup red onion, finely chopped

  • – 1/2 cup crumbled feta cheese

  • – 1/4 cup fresh parsley, chopped

  • – 1/4 cup fresh mint, chopped (optional)

  • – 1/4 cup extra virgin olive oil

  • – 2 tablespoons red wine vinegar

  • – 1 teaspoon dried oregano

  • – 1 clove garlic, minced

  • – Salt and black pepper, to taste


Instructions

  1. Cook Pasta:
    Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

  2. Prepare Dressing:
    In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.

  3. Combine Salad:
    In a large bowl, toss together the cooled pasta, cherry tomatoes, cucumber, olives, red onion, parsley, and mint (if using).

  4. Add Dressing:
    Pour the dressing over the salad and toss gently to coat all ingredients evenly.

  5. Add Feta:
