Ingredients

– 12 oz (340g) rotini or penne pasta

– 1 cup cherry tomatoes, halved

– 1 cup cucumber, diced

– 1/2 cup Kalamata olives, pitted and sliced

– 1/2 cup red onion, finely chopped

– 1/2 cup crumbled feta cheese

– 1/4 cup fresh parsley, chopped

– 1/4 cup fresh mint, chopped (optional)

– 1/4 cup extra virgin olive oil

– 2 tablespoons red wine vinegar

– 1 teaspoon dried oregano

– 1 clove garlic, minced

– Salt and black pepper, to taste
Instructions

Cook Pasta:
Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool. -
Prepare Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper. -
Combine Salad:
In a large bowl, toss together the cooled pasta, cherry tomatoes, cucumber, olives, red onion, parsley, and mint (if using). -
Add Dressing:
Pour the dressing over the salad and toss gently to coat all ingredients evenly. -
Add Feta:
Sprinkle crumbled feta cheese on top and give a light toss. -
Chill & Serve:
Refrigerate for at least 30 minutes before serving to let flavors meld beautifully.
