Ingredients

4 slices of sourdough or hearty white bread

1 cup shredded Mexican blend cheese (cheddar, Monterey Jack, asadero, etc.)

¼ cup pickled jalapeños (sliced)

½ avocado, sliced

¼ cup black beans (rinsed and drained)

2 tbsp chopped fresh cilantro
-
½ tsp chili powder
-
2 tbsp butter, softened
-
Optional: salsa or sour cream for dipping
Instructions

Prep the Bread:

Spread butter on one side of each slice of bread.

Lay the slices butter-side down on a clean surface.

Assemble the Sandwiches:

On two slices, layer:

A generous handful of Mexican cheese blend

A few jalapeño slices
-
Avocado, black beans, and a sprinkle of chili powder

A bit of cilantro

Top with remaining cheese and close with the other bread slices, butter-side up.

Grill the Sandwiches:

Heat a skillet over medium heat.

Grill sandwiches for 3–4 minutes per side, pressing down gently, until golden brown and cheese is melted.

Slice in half and serve with salsa, guacamole, or sour cream on the side.
