Mexican Grilled Cheese Sandwich Recipe: A Spicy, Cheesy Twist on a Classic

  • 4 slices of sourdough or hearty white bread

  • 1 cup shredded Mexican blend cheese (cheddar, Monterey Jack, asadero, etc.)

  • ¼ cup pickled jalapeños (sliced)

  • ½ avocado, sliced

  • ¼ cup black beans (rinsed and drained)

  • 2 tbsp chopped fresh cilantro

  • ½ tsp chili powder

  • 2 tbsp butter, softened

  • Optional: salsa or sour cream for dipping


Instructions

  • Prep the Bread:

    • Spread butter on one side of each slice of bread.

    • Lay the slices butter-side down on a clean surface.

  • Assemble the Sandwiches:

    • On two slices, layer:

      • A generous handful of Mexican cheese blend

      • A few jalapeño slices

      • Avocado, black beans, and a sprinkle of chili powder

      • A bit of cilantro

    • Top with remaining cheese and close with the other bread slices, butter-side up.

  • Grill the Sandwiches:

    • Heat a skillet over medium heat.

    • Grill sandwiches for 3–4 minutes per side, pressing down gently, until golden brown and cheese is melted.

 

  • Serve Hot:

    • Slice in half and serve with salsa, guacamole, or sour cream on the side.
