Ingredients
For the Crust:
2 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
For the Cheesecake Layer:
16 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups whipped topping (like Cool Whip)
For the Strawberry Layer:
2 cups fresh strawberries, sliced
1 package (3 ounces) strawberry gelatin
1 cup boiling water
½ cup cold water
For the Topping:
2 cups whipped topping
½ cup crushed graham crackers
Fresh strawberry slices for garnish
Instructions
Prepare the Crust: In a medium bowl, mix graham cracker crumbs with melted butter until combined. Press the mixture firmly into the bottom of a 9×13-inch dish. Place in the fridge to set while preparing the next layer.
Make the Cheesecake Layer: In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped topping. Spread evenly over the crust.
Prepare the Strawberry Layer: In a separate bowl, dissolve strawberry gelatin in boiling water. Stir in cold water and let cool slightly. Arrange sliced strawberries over the cheesecake layer, then gently pour the gelatin mixture over them. Refrigerate for at least 4 hours or until set.
Add the Topping: Spread whipped topping evenly over the chilled dessert. Sprinkle with crushed graham crackers and garnish with fresh strawberry slices.
