1 lb ground beef or ground turkey

1 tbsp olive oil

1 small onion (diced)

2 cloves garlic (minced)

3 medium potatoes (diced into small cubes)

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

1 cup beef or chicken broth

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 tbsp chopped parsley (for garnish)
Instructions

Cook the Meat:

Heat olive oil in a large skillet over medium heat.

Add diced onion and cook for 2 minutes until softened.

Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess grease if needed.

Cook the Potatoes:

Stir in minced garlic, potatoes, salt, pepper, paprika, garlic powder, and onion powder.

Pour in broth, cover, and let simmer for 10-12 minutes, stirring occasionally, until potatoes are tender.

Melt the Cheese:

Once potatoes are cooked, sprinkle shredded cheddar and mozzarella cheese on top.

Cover with a lid and let the cheese melt for 2-3 minutes.
