1 lb ground beef (or ground sausage)

4 medium potatoes, diced small

1 small onion, diced

2 cloves garlic, minced

2 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt & pepper, to taste

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese

1/4 cup cooked bacon bits (optional)

2 green onions, sliced (for garnish)
Instructions

Heat olive oil in a large skillet over medium heat.

Add diced potatoes, season with paprika, garlic powder, onion powder, salt, and pepper. Cook for 10–12 minutes, stirring occasionally, until potatoes start to soften and brown.

Add ground beef and onion to the skillet. Cook until beef is browned and fully cooked, breaking it apart with a spatula. Drain excess grease if needed.

Stir in garlic and cook 1 more minute.

Sprinkle cheddar and mozzarella cheese evenly over the skillet. Cover and let cook on low until cheese melts, about 2–3 minutes.

Top with bacon bits (if using) and sliced green onions.
