  • Author: Hannah

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 cup orzo pasta

  • 2 ½ cups chicken broth

  • ½ cup heavy cream

  • ½ cup sun-dried tomatoes, chopped

  • ½ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon red pepper flakes (optional)

  • Salt and pepper, to taste

  • Fresh basil or parsley, for garnish

Instructions

Cook Shrimp:
In a large skillet or pot, heat 1 tablespoon olive oil over medium-high heat. Season shrimp with salt and pepper. Cook for 1–2 minutes per side until pink and opaque. Remove and set aside.

Sauté Garlic & Toast Orzo:
Add remaining tablespoon of olive oil to the same pan. Add garlic and cook for 30 seconds until fragrant. Stir in orzo and toast for 1–2 minutes until lightly golden.

Add Liquids & Simmer:
Pour in chicken broth, heavy cream, and sun-dried tomatoes. Stir to combine. Bring to a boil, then reduce heat to low and simmer uncovered for 10–12 minutes, stirring occasionally, until orzo is tender and creamy.

Finish the Dish:
Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Return cooked shrimp to the pan and stir to combine. Let everything heat through for 2–3 minutes.

Serve:
Garnish with fresh basil or parsley. Serve hot and watch everyone fall in love with this creamy, dreamy one-pot dish!
