One Pot Taco Spaghetti Recipe: The Ultimate Tex-Mex Pasta Comfort Food

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 (1 oz) packet taco seasoning

  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)

  • 1 (8 oz) can tomato sauce

  • 3 cups beef broth

  • 8 oz spaghetti (uncooked, broken in half)

  • 1 ½ cups shredded cheddar cheese

  • Salt & pepper, to taste

  • Fresh cilantro or green onions, for garnish (optional)


Instructions

  • In a large pot or deep skillet, brown ground beef over medium heat. Drain excess grease.

  • Add diced onion and garlic. Cook for 2–3 minutes until softened.

  • Stir in taco seasoning, Rotel, tomato sauce, and beef broth. Mix well.

  • Add spaghetti noodles, pressing them down so they’re mostly submerged in the liquid.

  • Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender.

  • Remove from heat and stir in shredded cheddar cheese until melted and creamy.

  • Garnish with cilantro or green onions if desired.
