Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 (1 oz) packet taco seasoning

1 (10 oz) can Rotel (diced tomatoes with green chilies)

1 (8 oz) can tomato sauce

3 cups beef broth
-
8 oz spaghetti (uncooked, broken in half)

1 ½ cups shredded cheddar cheese

Salt & pepper, to taste

Fresh cilantro or green onions, for garnish (optional)
Instructions

In a large pot or deep skillet, brown ground beef over medium heat. Drain excess grease.

Add diced onion and garlic. Cook for 2–3 minutes until softened.

Stir in taco seasoning, Rotel, tomato sauce, and beef broth. Mix well.

Add spaghetti noodles, pressing them down so they’re mostly submerged in the liquid.

Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender.

Remove from heat and stir in shredded cheddar cheese until melted and creamy.

Garnish with cilantro or green onions if desired.
