24 Oreo cookies (crushed)

4 tbsp unsalted butter (melted)

16 oz cream cheese (softened)

½ cup granulated sugar

1 tsp vanilla extract

2 large eggs

½ cup sour cream

10 Oreo cookies (chopped)
Instructions

Prepare the Crust:

Preheat oven to 325°F (163°C).

Line an 8×8-inch baking pan with parchment paper.

In a bowl, mix crushed Oreos with melted butter.

Press the mixture firmly into the bottom of the pan.

Bake for 8 minutes, then let cool.

Make the Cheesecake Filling:

In a large bowl, beat cream cheese, sugar, and vanilla until smooth.

Add eggs one at a time, mixing after each addition.

Stir in sour cream and chopped Oreos.

Bake the Cheesecake:

Pour the filling over the cooled crust and spread evenly.

Bake for 35-40 minutes, until the center is set.

Let cool completely, then refrigerate for at least 3 hours.

Lift the cheesecake out using the parchment paper.
