4 cups ripe peaches, peeled and sliced (fresh or frozen)

1/2 cup granulated sugar (adjust to taste)

1 tablespoon lemon juice

Instructions
1. Prepare Simple Syrup:
In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool.
2. Blend Peaches:
In a blender or food processor, add peach slices, lemon juice, and cooled simple syrup. Blend until smooth.
3. Freeze Mixture:
Pour the peach puree into a shallow, freezer-safe container. Freeze for about 1 hour until edges start to freeze.
4. Stir to Break Ice Crystals:
Remove from freezer and stir vigorously with a fork or whisk to break up ice crystals.
5. Repeat Freezing and Stirring:
Return to freezer and repeat stirring every 30 minutes for 2-3 hours, until sorbet is firm and smooth.
6. Serve:
Scoop into bowls or cones and enjoy your fresh peach sorbet!
