Peanut Butter Cheesecake Bites: Easy No-Bake Dessert Recipe

For the Crust:

  • 1 cup graham cracker crumbs

  • 3 tbsp melted butter

  • 2 tbsp brown sugar

For the Filling:

  • 8 oz cream cheese, softened

  • ½ cup creamy peanut butter

  • ⅓ cup powdered sugar

  • 1 tsp vanilla extract

  • ¼ cup heavy whipping cream (or milk, for a lighter texture)

For the Topping:

  • ½ cup melted chocolate chips (optional)

  • Crushed peanuts or mini chocolate chips (for garnish)


Instructions

  • Make the Crust:

    • In a bowl, mix graham cracker crumbs, melted butter, and brown sugar.

    • Press a spoonful into the bottoms of a mini muffin pan or silicone molds.

    • Chill in the fridge while you prepare the filling.

  • Prepare the Filling:

    • In a large bowl, beat cream cheese and peanut butter until smooth and creamy.

    • Add powdered sugar and vanilla extract, mixing until combined.

    • Slowly beat in heavy cream until light and fluffy.

  • Assemble the Bites:

    • Spoon or pipe the filling over the chilled crusts.

    • Smooth the tops with a spatula or back of a spoon.

  • Chill:

    • Refrigerate for 2-3 hours, or until set.

 

  • Add Toppings & Serve:

    • Drizzle with melted chocolate and sprinkle with crushed peanuts or mini chocolate chips.

    • Store in the fridge until ready to serve.
