Peanut Butter Rice Krispie Balls: Easy No-Bake Treat Recipe

  • 1 cup creamy peanut butter

  • ¼ cup unsalted butter

  • 1 tsp vanilla extract

  • 2 cups powdered sugar

  • 2 cups Rice Krispies cereal

  • 12 oz semisweet or milk chocolate chips

  • 1 tbsp coconut oil or shortening (optional, for smoother dipping)


Instructions

  • Prepare the Filling:

    • In a medium saucepan over low heat, melt peanut butter and butter together until smooth.

    • Remove from heat and stir in vanilla extract and powdered sugar until fully combined.

    • Gently fold in Rice Krispies, being careful not to crush them.

  • Form the Balls:

    • Scoop out mixture and roll into 1-inch balls.

    • Place on a parchment-lined baking sheet and refrigerate for 30 minutes, or until firm.

  • Melt the Chocolate:

    • In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.

  • Dip the Balls:

    • Using a fork or toothpick, dip each ball into the melted chocolate, coating completely.

    • Return to the baking sheet and refrigerate for 15-20 minutes, or until chocolate is set.

 

  • Serve or Store:

    • Enjoy immediately, or store in an airtight container in the fridge for up to 1 week.
