1 cup creamy peanut butter

¼ cup unsalted butter

1 tsp vanilla extract

2 cups powdered sugar

2 cups Rice Krispies cereal

12 oz semisweet or milk chocolate chips

1 tbsp coconut oil or shortening (optional, for smoother dipping)
Instructions

Prepare the Filling:

In a medium saucepan over low heat, melt peanut butter and butter together until smooth.

Remove from heat and stir in vanilla extract and powdered sugar until fully combined.

Gently fold in Rice Krispies, being careful not to crush them.

Form the Balls:

Scoop out mixture and roll into 1-inch balls.

Place on a parchment-lined baking sheet and refrigerate for 30 minutes, or until firm.

Melt the Chocolate:

In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.

Dip the Balls:

Using a fork or toothpick, dip each ball into the melted chocolate, coating completely.

Return to the baking sheet and refrigerate for 15-20 minutes, or until chocolate is set.
