Penne Pasta with Chicken: A Creamy, Delicious Weeknight Dinner Recipe

For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

For the Pasta:

  • 12 oz penne pasta

  • 1 tbsp butter

  • 2 garlic cloves (minced)

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • ¼ tsp red pepper flakes (optional)

  • Salt and black pepper (to taste)

  • 2 tbsp chopped fresh parsley (for garnish)


Instructions

  • Cook the Chicken:

    • Heat olive oil in a large skillet over medium-high heat.

    • Season the chicken with salt, pepper, garlic powder, and paprika.

    • Cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

  • Cook the Pasta:

    • Boil penne pasta according to package instructions until al dente. Drain and set aside.

  • Make the Sauce:

    • In the same skillet, melt butter and sauté garlic for 30 seconds.

    • Pour in heavy cream and chicken broth, stirring well.

    • Add Parmesan cheese, Italian seasoning, red pepper flakes, salt, and pepper. Simmer for 2-3 minutes until slightly thickened.

  • Combine Everything:

    • Add the cooked chicken and pasta to the sauce, tossing to coat evenly.

    • Let it simmer for a minute to absorb the flavors.

 

  • Serve:

    • Garnish with fresh parsley and extra Parmesan cheese.
