Pineapple Cilantro Grilled Chicken: A Flavorful Tropical Delight for Summer BBQs

4 boneless, skinless chicken breasts
1 cup fresh pineapple, chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon ground cumin
Salt and pepper to taste
Lime wedges, for serving


Instructions

  • In a blender or food processor, combine pineapple, cilantro, lime juice, olive oil, honey, garlic powder, cumin, salt, and pepper. Blend until smooth.

  • Reserve 1/4 cup of the marinade for later use and pour the rest over the chicken breasts. Let the chicken marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

  • Preheat the grill to medium-high heat.

  • Remove chicken from the marinade and grill for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).

 

  • Once grilled, drizzle the reserved marinade over the chicken and serve with lime wedges.
