1 cup old-fashioned rolled oats
1/2 cup unsweetened shredded coconut (plus extra for rolling)
1/2 cup dried pineapple, finely chopped
1/4 cup cashew butter or almond butter
2 tablespoons honey or maple syrup
1 tablespoon chia seeds or ground flaxseed (optional)
1/2 teaspoon vanilla extract
Pinch of salt
1–2 tablespoons water, as needed

  1. Prep Pineapple:

    • Finely chop the dried pineapple. If it’s too dry or firm, soak in warm water for 5–10 minutes, then pat dry.

  2. Mix Ingredients:

    • In a medium bowl, combine oats, shredded coconut, pineapple, chia seeds (if using), and salt.

    • Stir in cashew butter, honey, and vanilla extract until the mixture holds together. Add a splash of water if too dry.

  3. Form Bites:

    • Roll mixture into 1-inch balls. If desired, roll each ball in additional shredded coconut for a decorative coating.

  4. Chill and Store:

    • Place in the refrigerator for 20–30 minutes to firm up.

    • Store in an airtight container in the fridge for up to 1 week or freeze for longer.
