2 tablespoons honey or maple syrup

Finely chop the dried pineapple. If it’s too dry or firm, soak in warm water for 5–10 minutes, then pat dry.

In a medium bowl, combine oats, shredded coconut, pineapple, chia seeds (if using), and salt.

Stir in cashew butter, honey, and vanilla extract until the mixture holds together. Add a splash of water if too dry.

Roll mixture into 1-inch balls. If desired, roll each ball in additional shredded coconut for a decorative coating.
