Ingredients
4 large eggs
¾ cup milk
½ cup pumpkin puree
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon pumpkin pie spice
¼ teaspoon salt
8 slices thick-cut bread (brioche, challah, or Texas toast)
2 tablespoons butter, for cooking
Instructions
Prepare the Batter:
In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, pumpkin pie spice, and salt until smooth.
Cook the French Toast:
Heat a large skillet or griddle over medium heat and melt 1 tablespoon butter.
Dip each slice of bread into the pumpkin mixture, coating both sides but not oversaturating.
Place the coated bread onto the skillet and cook for 2-3 minutes per side, until golden brown and crispy. Repeat with remaining slices, adding more butter as needed.
Serve:
Plate the French toast and top with maple syrup, whipped cream, chopped pecans, or a dusting of powdered sugar.
