Ingredients

• 1 cup pumpkin puree

• 2 cups old-fashioned oats

• 1 cup flour

• 1 cup brown sugar

• 1/2 cup butter, softened

• 1 tsp vanilla extract

• 1 egg

• 1 tsp baking soda

• 1/2 tsp baking powder

• 1 tsp cinnamon

• 1/2 tsp nutmeg

• 1/4 tsp ginger

• 1/4 tsp cloves

• 1/4 tsp salt

• 1/2 cup raisins or chocolate chips (optional)


Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, beat together the butter and brown sugar until creamy.

3. Add the egg, vanilla extract, and pumpkin puree. Mix well until combined.

4. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.

5. Gradually mix the dry ingredients into the wet mixture until just combined.

6. Stir in the oats and optional raisins or chocolate chips if using.

7. Drop rounded spoonfuls of the dough onto the prepared baking sheet, about 2 inches apart.

8. Bake for 12-15 minutes, or until the edges are golden brown.

9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
