Ingredients
For the Shrimp Scampi:
1 lb large shrimp, peeled and deveined
3 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
½ cup dry white wine or chicken broth
1 tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
¼ cup fresh parsley, chopped
1 teaspoon lemon zest
½ cup grated Parmesan cheese (optional)
8 oz linguine or spaghetti, cooked
Instructions
Cook the Shrimp:
Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
Add the minced garlic and red pepper flakes, cooking for about 30 seconds until fragrant.
Add shrimp to the skillet, seasoning with salt and black pepper. Cook for 2-3 minutes per side, until shrimp turn pink and opaque. Remove from the skillet and set aside.
Make the Sauce:
4. Pour the white wine or chicken broth into the skillet, scraping up any browned bits from the bottom. Let simmer for 2 minutes.
5. Stir in the remaining butter, fresh lemon juice, and lemon zest.
Combine and Serve:
6. Return the shrimp to the skillet and toss to coat in the sauce.
7. Add the cooked pasta and toss everything together. If desired, sprinkle with Parmesan cheese.
8. Garnish with fresh parsley and serve immediately.
