½ cup unsalted butter, softened

1 ¼ cups all-purpose flour

1 cup semi-sweet chocolate chips

12 mini Reese’s Peanut Butter Cups (unwrapped and chilled)
Instructions

Make the Cookie Dough:

In a large bowl, cream together the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until fully combined.

In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.

Fold in the chocolate chips.

Stuff the Cookies:

Scoop about 2 tablespoons of dough and flatten it slightly in your palm.

Place a mini Reese’s cup in the center and wrap the dough around it, sealing completely.

Repeat with remaining dough and Reese’s cups.

Chill:

Place stuffed cookie dough balls on a lined baking sheet and chill for 30 minutes. This helps prevent spreading.

Bake:

Preheat oven to 350°F (175°C).

Bake chilled cookies for 10–12 minutes, or until edges are golden and centers are just set.

Cool and Serve:

Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
