Reese’s Stuffed Peanut Butter Chocolate Chip Cookies: A Decadent Delight

  • ½ cup unsalted butter, softened

  • ½ cup creamy peanut butter

  • ½ cup brown sugar, packed

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 ¼ cups all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup semi-sweet chocolate chips

  • 12 mini Reese’s Peanut Butter Cups (unwrapped and chilled)


Instructions

  • Make the Cookie Dough:

    • In a large bowl, cream together the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

    • Beat in the egg and vanilla extract until fully combined.

    • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.

    • Fold in the chocolate chips.

  • Stuff the Cookies:

    • Scoop about 2 tablespoons of dough and flatten it slightly in your palm.

    • Place a mini Reese’s cup in the center and wrap the dough around it, sealing completely.

    • Repeat with remaining dough and Reese’s cups.

  • Chill:

    • Place stuffed cookie dough balls on a lined baking sheet and chill for 30 minutes. This helps prevent spreading.

  • Bake:

    • Preheat oven to 350°F (175°C).

    • Bake chilled cookies for 10–12 minutes, or until edges are golden and centers are just set.

 

  • Cool and Serve:

    • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

    • Enjoy warm for melty chocolate + gooey peanut butter bliss!
