Enjoy tender beef in a creamy sauce with this easy slow cooker beef stroganoff stew. Perfect for busy nights!
Ingredients
• 2 lbs beef stew meat, cut into chunks
• 1 large onion, chopped
• 3 cloves garlic, minced
• 8 oz mushrooms, sliced
• 2 cups beef broth
• 1 cup sour cream
• 2 tbsp Dijon mustard
• 2 tbsp Worcestershire sauce
• 2 tbsp all-purpose flour
• Salt and pepper to taste
• 1 tbsp olive oil
• 12 oz egg noodles (optional)
Instructions
1. In a large skillet, heat olive oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
2. Transfer the browned beef to your slow cooker. Add in chopped onions, garlic, and mushrooms.
3. In a small bowl, whisk together beef broth, Dijon mustard, Worcestershire sauce, and flour until smooth. Pour the mixture over the beef and veggies in the slow cooker.
4. Season with salt and pepper to taste. Stir everything together to combine.
5. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
6. In the last 30 minutes of cooking, stir in the sour cream.
7. If using egg noodles, cook them separately according to package instructions and serve the stroganoff over the noodles.
