Ingredients
For the beef:
1.5 lbs (700g) beef (such as chuck or sirloin), cut into bite-sized pieces
2 tbsp olive oil
4 tbsp butter
4 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1/2 tsp smoked paprika
1/2 tsp dried oregano
For the potatoes:
1 lb (500g) baby potatoes, halved
1 tsp salt
1/2 tsp black pepper
1 tsp dried oregano
1/2 tsp garlic powder
1 tbsp olive oil
Instructions
Prepare the Beef:
Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2-3 minutes until browned.
Transfer the beef to the slow cooker.
Garlic Butter:
In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds. Pour over the beef in the slow cooker.
Add Potatoes:
Add the halved baby potatoes to the slow cooker. Sprinkle with salt, pepper, oregano, and garlic powder. Drizzle with olive oil and mix well.
Slow Cook:
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the beef is tender.
Serve:
Garnish with fresh parsley if desired and serve hot.
