Ingredients
For the Casserole:
1 lb ground beef
1 small onion (diced)
2 garlic cloves (minced)
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes (undrained)
1 tsp Italian seasoning
½ tsp paprika
Salt & pepper to taste
For the Noodles:
8 oz egg noodles (cooked and drained)
1 cup sour cream
1 cup cottage cheese
½ cup shredded cheddar cheese
2 tbsp fresh parsley (chopped, optional)
For Topping:
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
Instructions
Prepare the Beef Mixture:
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess grease.
Add garlic and cook for 1 minute.
Stir in tomato sauce, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Simmer for 10 minutes.
Prepare the Noodles:
5. In a large bowl, combine cooked egg noodles, sour cream, cottage cheese, cheddar cheese, and parsley.
Assemble the Casserole:
6. Layer half of the noodle mixture into the baking dish.
7. Spread half of the beef mixture on top.
8. Repeat layers with remaining noodles and beef.
9. Sprinkle cheddar and Parmesan cheese evenly on top.
Bake:
10. Bake uncovered for 25-30 minutes or until bubbly and cheese is melted.
Serve:
11. Garnish with fresh parsley and serve hot with garlic bread or a side salad.
