Southwest Chicken Chopped Salad Recipe – Fresh, Flavorful, and Healthy

Ingredients

  • 2 cups cooked chicken breast, chopped or shredded

  • 4 cups romaine lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cup black beans, drained and rinsed

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 1 avocado, diced

  • ½ cup red bell pepper, diced

  • ½ cup shredded cheddar or pepper jack cheese

  • ¼ cup red onion, finely chopped

  • ¼ cup fresh cilantro, chopped

  • ½ cup tortilla strips or crushed tortilla chips (optional)

For the Dressing:

  • ½ cup Greek yogurt or sour cream

  • 2 tablespoons lime juice

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • ½ teaspoon cumin

  • ½ teaspoon garlic powder

  • Salt and pepper to taste


Instructions

  • Make the Dressing:

    • In a small bowl, whisk together Greek yogurt, lime juice, olive oil, chili powder, cumin, garlic powder, salt, and pepper.

    • Set aside.

  • Prepare the Salad:

    • In a large bowl, combine romaine lettuce, chicken, tomatoes, black beans, corn, avocado, bell pepper, red onion, cilantro, and cheese.

 

  • Assemble & Serve:

    • Drizzle the dressing over the salad and toss to coat evenly.

    • Top with tortilla strips for extra crunch (optional).

    • Serve immediately and enjoy!
