1 lb smoked sausage (sliced)

1 bell pepper (sliced, any color)

1 can (14 oz) diced tomatoes (with juice)

1 ½ cups heavy cream

½ cup chicken broth

2 tsp Cajun seasoning (adjust to taste)

¼ tsp red pepper flakes (optional)

½ cup grated Parmesan cheese

Instructions

Cook the Pasta:

Boil pasta according to package instructions until al dente. Drain and set aside.

Cook the Sausage:

Heat olive oil in a large skillet over medium-high heat.

Add sliced sausage and cook until browned, about 3-4 minutes per side. Remove and set aside.

Sauté the Vegetables:

In the same skillet, add onion, garlic, and bell pepper.

Sauté for 2-3 minutes until softened.

Make the Sauce:

Add diced tomatoes (with juice), heavy cream, chicken broth, Cajun seasoning, paprika, and red pepper flakes.

Stir well and let simmer for 5 minutes.

Combine Everything:

Return the cooked sausage to the pan and stir in Parmesan cheese.

Add the drained pasta and toss until fully coated in the sauce.
