Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
For the Mango Salsa:
1 ripe mango, diced
1/4 cup red onion, finely chopped
1/2 red bell pepper, diced
1 jalapeño, minced (seeds removed for less heat)
2 tablespoons chopped fresh cilantro
Juice of 1 lime
Salt to taste
Instructions

Rub chicken with olive oil and season with chili powder, paprika, garlic powder, salt, and pepper.

Grill or pan-sear chicken over medium heat for 6–7 minutes per side or until fully cooked.

In a bowl, mix mango, red onion, bell pepper, jalapeño, cilantro, lime juice, and salt.

Spoon mango salsa over grilled chicken and serve warm.
