Ingredients
6 cups fresh baby spinach
1 1/2 cups fresh strawberries, sliced
1/4 red onion, thinly sliced
1/3 cup crumbled feta cheese
1/4 cup sliced almonds or candied pecans
Optional: 1 avocado, sliced
For the dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Instructions

In a large bowl, combine spinach, strawberries, red onion, feta, and nuts. Add avocado if using.

In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon, salt, and pepper until well blended.

Drizzle dressing over salad just before serving and toss gently to coat.

Serve immediately as a light lunch or side dish.
