Spring Berry Crisp Recipe – Easy, Fresh & Irresistibly Delicious Dessert

4 cups mixed fresh berries (such as strawberries, blueberries, raspberries)
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 teaspoon lemon zest
1 teaspoon vanilla extract

For the crisp topping:
3/4 cup rolled oats
1/2 cup all-purpose flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup cold unsalted butter, cut into cubes
Pinch of salt


Instructions

  • Preheat oven to 350°F (175°C).

  • In a large bowl, toss berries with sugar, cornstarch, lemon zest, and vanilla. Pour into a greased 8×8-inch baking dish.

  • In another bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in the butter using your fingers or a pastry cutter until the mixture is crumbly.

  • Sprinkle the crisp topping evenly over the berry mixture.

  • Bake for 35–40 minutes, or until the topping is golden and the berries are bubbling.

 

  • Let cool slightly before serving. Delicious with a scoop of vanilla ice cream!
