Ingredients
12 oz pasta (spaghetti, penne, or your favorite type)
1 cup fresh basil leaves
1/2 cup fresh parsley leaves
1/4 cup fresh mint leaves
1/4 cup grated Parmesan cheese
1/4 cup pine nuts (or walnuts)
2 cloves garlic
1/4 cup olive oil
1 tablespoon fresh lemon juice
Salt and black pepper, to taste
1/4 cup extra Parmesan cheese, for garnish (optional)
Fresh basil or mint leaves, for garnish
Instructions

Cook pasta according to package instructions until al dente. Drain, reserving 1/4 cup of pasta water.

In a food processor or blender, combine basil, parsley, mint, Parmesan cheese, pine nuts, garlic, olive oil, and lemon juice. Blend until smooth, adding reserved pasta water a little at a time to achieve desired consistency.

Season pesto with salt and pepper to taste.

Toss cooked pasta with the pesto, adding more pasta water if needed to coat the pasta evenly.

Serve with extra Parmesan cheese and fresh herb garnish.
