Ingredients
For the Blondies:

1/2 cup (1 stick) unsalted butter, melted

3/4 cup granulated sugar

1 large egg

1 tablespoon fresh lemon juice

1 tablespoon lemon zest (from 1 lemon)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup all-purpose flour

3/4 cup fresh strawberries, chopped

1 tablespoon flour (for tossing strawberries to prevent sinking)
For the Lemon Glaze:

1/2 cup powdered sugar

1–2 tablespoons lemon juice (to desired consistency)

Optional: extra lemon zest for garnish
Instructions
1. Preheat oven:

Preheat to 350°F (175°C).

Line an 8×8-inch baking pan with parchment paper or lightly grease it.
2. Make the batter:

In a mixing bowl, whisk together melted butter and sugar until smooth.

Beat in the egg, lemon juice, lemon zest, and vanilla.

Add flour and salt, stirring until just combined.
3. Add strawberries:

Toss chopped strawberries with 1 tbsp flour (this keeps them from sinking).

Gently fold into the batter. Don’t overmix.
4. Bake:

Pour the batter into the prepared pan and spread evenly.

Bake for 25–30 minutes, or until edges are golden and center is set.

Cool completely before glazing.
5. Make the glaze:

Whisk together powdered sugar and lemon juice until smooth and pourable.

Drizzle or spread over cooled blondies. Top with extra lemon zest, if desired.
6. Slice & enjoy:

Once glaze sets (about 10–15 minutes), cut into squares and serve!
