For the Blondies:

  • 1/2 cup (1 stick) unsalted butter, melted

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon lemon zest (from 1 lemon)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 cup all-purpose flour

  • 3/4 cup fresh strawberries, chopped

  • 1 tablespoon flour (for tossing strawberries to prevent sinking)

For the Lemon Glaze:

  • 1/2 cup powdered sugar

  • 12 tablespoons lemon juice (to desired consistency)

  • Optional: extra lemon zest for garnish


Instructions

1. Preheat oven:

  • Preheat to 350°F (175°C).

  • Line an 8×8-inch baking pan with parchment paper or lightly grease it.


2. Make the batter:

  • In a mixing bowl, whisk together melted butter and sugar until smooth.

  • Beat in the egg, lemon juice, lemon zest, and vanilla.

  • Add flour and salt, stirring until just combined.


3. Add strawberries:

  • Toss chopped strawberries with 1 tbsp flour (this keeps them from sinking).

  • Gently fold into the batter. Don’t overmix.


4. Bake:

  • Pour the batter into the prepared pan and spread evenly.

  • Bake for 25–30 minutes, or until edges are golden and center is set.

  • Cool completely before glazing.


5. Make the glaze:

  • Whisk together powdered sugar and lemon juice until smooth and pourable.

  • Drizzle or spread over cooled blondies. Top with extra lemon zest, if desired.


6. Slice & enjoy:

  • Once glaze sets (about 10–15 minutes), cut into squares and serve!
