Strawberry Lemonade Bars Recipe: A Refreshing Summer Dessert

Ingredients

For the crust:
1 1/2 cups all-purpose flour
1/4 cup powdered sugar
1/2 teaspoon salt
1/2 cup unsalted butter, softened

For the filling:
2 large eggs
1 1/2 cups granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup fresh lemon juice (about 2 lemons)
1/4 cup strawberry puree (fresh or thawed frozen strawberries blended)
Zest of 1 lemon
Powdered sugar, for dusting


Instructions

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving extra overhang on the sides for easy removal later.

  • For the crust: In a medium bowl, mix the flour, powdered sugar, and salt. Add the softened butter and mix until the dough comes together. Press the dough evenly into the bottom of the prepared baking dish.

  • Bake the crust for 12–15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.

  • For the filling: In a large bowl, whisk together the eggs, granulated sugar, flour, baking powder, and salt until smooth. Add the lemon juice, strawberry puree, and lemon zest, stirring to combine.

  • Pour the filling mixture over the cooled crust and return the dish to the oven. Bake for 20–25 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.

  • Allow the bars to cool completely in the baking dish. Once cooled, use the parchment paper to lift the bars out of the dish and transfer to a cutting board.

 

  • Dust with powdered sugar before cutting into squares. Serve and enjoy!
