For the Strawberries:

For the Whipped Cream:

Instructions

Prep the strawberries: Toss sliced strawberries with 1/4 cup sugar. Let sit at room temperature for 30 minutes to become juicy.

Make the biscuits: Preheat oven to 425°F (220°C). In a large bowl, whisk flour, sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fingers until it resembles coarse crumbs.

Add milk & vanilla: Stir in milk and vanilla until just combined. Do not overmix.

Shape & bake: Drop or shape into 6 rounds and place on a baking sheet. Brush tops with milk. Bake for 12–15 minutes or until golden brown. Cool slightly.

Whip the cream: Beat heavy cream, powdered sugar, and vanilla until soft peaks form.

Assemble shortcakes: Split the biscuits in half. Spoon strawberries over the bottom half, add whipped cream, then top with the other half of the biscuit. Add more cream and berries on top, if desired.
