Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
1 tablespoon olive oil
For the Filling:
1 cup fresh spinach, chopped
½ cup crumbled feta cheese
1 clove garlic, minced
¼ teaspoon red pepper flakes (optional)
1 tablespoon cream cheese (optional, for extra creaminess)
For Cooking:
1 tablespoon olive oil
1 tablespoon butter
Instructions
Prepare the Chicken:
Preheat oven to 375°F (190°C).
Using a sharp knife, slice a pocket into each chicken breast, being careful not to cut all the way through.
Season both sides of the chicken with salt, black pepper, garlic powder, and paprika.
Prepare the Filling:
In a bowl, combine chopped spinach, feta cheese, minced garlic, red pepper flakes, and cream cheese. Mix well.
Stuff each chicken breast with the mixture and secure with toothpicks if needed.
Cook the Chicken:
Heat olive oil and butter in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken for 2-3 minutes per side until golden brown.
Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serve:
Let the chicken rest for 5 minutes before slicing. Serve with a side of roasted vegetables, rice, or salad.
