2 lbs ground beef (or a mix of beef & pork)

1 cup Italian breadcrumbs

1/2 cup grated Parmesan cheese

2 eggs

1/2 cup milk

1 small onion, finely chopped

3 cloves garlic, minced

2 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (optional)

1 cup fresh spinach leaves

1 cup marinara sauce
-
Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with foil and lightly grease.

In a large bowl, mix ground beef, breadcrumbs, Parmesan, eggs, milk, onion, garlic, Italian seasoning, salt, and pepper until combined.

On a piece of parchment paper, flatten the meat mixture into a rectangle about 1/2-inch thick.

Layer spinach, mozzarella, and pepperoni evenly over the meat.

Carefully roll the meatloaf from one end, using the parchment to help. Seal the edges tightly.

Place seam-side down on the baking sheet. Spread marinara sauce over the top.

Bake for 50–60 minutes, until fully cooked.

Let rest for 10 minutes before slicing. Garnish with parsley and extra sauce if desired.
