Summer Blueberry Peach Salad: A Refreshing Delight for Warm Days

Ingredients

  • 2 ripe peaches, sliced

  • 1 cup fresh blueberries

  • 5 oz mixed greens (spinach, arugula, or spring mix)

  • 1/4 cup crumbled feta cheese

  • 1/4 cup candied pecans or walnuts

  • 2 tablespoons red onion, thinly sliced

Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar or white balsamic vinegar

  • 1 teaspoon honey

  • 1/2 teaspoon Dijon mustard

  • Salt and pepper, to taste


Instructions

Make Dressing:
In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.

Assemble Salad:
In a large salad bowl, combine mixed greens, sliced peaches, blueberries, red onion, feta cheese, and candied pecans.

Dress and Toss:
Drizzle with prepared dressing and gently toss to coat.

 

Serve:
Serve immediately as a refreshing summer side or light meal.
