Ingredients

4 cups fresh corn kernels (about 5–6 ears, cooked & cooled)

1 cup cherry tomatoes, halved

1 small red onion, finely diced

1 cucumber, diced

1/2 cup feta cheese, crumbled

1/4 cup fresh cilantro or parsley, chopped
Dressing:

3 tbsp olive oil

2 tbsp lime juice (freshly squeezed)

1 tbsp honey

1 tsp chili powder (optional for a kick)

Salt & pepper, to taste
Instructions

In a large mixing bowl, combine corn, tomatoes, red onion, cucumber, feta, and cilantro.

In a small bowl or jar, whisk together olive oil, lime juice, honey, chili powder (if using), salt, and pepper.

Pour dressing over the salad and toss until well coated.

Chill for 30 minutes to let flavors meld (optional but recommended).
