  • 4 cups fresh corn kernels (about 56 ears, cooked & cooled)

  • 1 cup cherry tomatoes, halved

  • 1 small red onion, finely diced

  • 1 cucumber, diced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup fresh cilantro or parsley, chopped

Dressing:

  • 3 tbsp olive oil

  • 2 tbsp lime juice (freshly squeezed)

  • 1 tbsp honey

  • 1 tsp chili powder (optional for a kick)

  • Salt & pepper, to taste


Instructions

  1. In a large mixing bowl, combine corn, tomatoes, red onion, cucumber, feta, and cilantro.

  2. In a small bowl or jar, whisk together olive oil, lime juice, honey, chili powder (if using), salt, and pepper.

  3. Pour dressing over the salad and toss until well coated.
