Taco Tortellini Recipe – Cheesy, Creamy, and Perfect for Easy Weeknight Dinners

1 lb ground beef or turkey
1 packet taco seasoning
1/2 cup water
1 (20 oz) package cheese tortellini (refrigerated or frozen)
1 cup salsa
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup black beans (optional)
1/2 cup corn (optional)
Chopped green onions and cilantro, for garnish


Instructions

  • Cook tortellini according to package directions. Drain and set aside.

  • In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat.

  • Add taco seasoning and water to the meat, stir well, and simmer for 3–4 minutes.

  • Stir in salsa, sour cream, black beans, and corn if using. Add the cooked tortellini and mix to combine.

  • Sprinkle with shredded cheddar cheese and let it melt over low heat.

 

  • Serve hot, garnished with green onions and cilantro.
