2 cups fresh watermelon, cubed

Juice of 1 lime (about 2 tablespoons)

8–10 fresh mint leaves

1–2 teaspoons honey or agave syrup (optional, depending on sweetness of watermelon)

Sparkling water or club soda, to top off

Ice cubes

Extra mint, lime wedges, and watermelon slices for garnish
Instructions

Blend the watermelon:

Add watermelon cubes to a blender and blend until smooth.

Strain through a fine mesh sieve if you prefer a smoother texture (optional).

Muddle the mint:

In a large glass or cocktail shaker, gently muddle the mint leaves with lime juice and honey using a muddler or the back of a spoon. Don’t over-muddle — just bruise the mint to release flavor.

Mix the mocktail:

Add watermelon juice to the muddled mint-lime mixture. Stir well.

Assemble:

Fill two glasses with ice.

Divide the watermelon mixture between the glasses.

Top with sparkling water or club soda.

Garnish and serve:

Garnish with mint sprigs, lime wedges, or a mini slice of watermelon on the rim.
