Ingredients
1 lb breakfast sausage, crumbled
1 medium onion, diced
1 red bell pepper, diced
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded mozzarella cheese
1 bag (32 oz) frozen tater tots
8 large eggs
1/2 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional, for extra flavor)
Instructions

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a large skillet, cook the crumbled sausage over medium heat until fully browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

Add the diced onion and bell pepper to the skillet and cook for 3–4 minutes, until softened. Remove from heat and set aside.

In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and paprika.

Spread the tater tots evenly in the bottom of the prepared baking dish. Top with the cooked sausage mixture.

Pour the egg mixture over the tater tots and sausage, making sure everything is evenly covered.

Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.

Bake for 40–45 minutes, or until the eggs are fully set and the cheese is golden and bubbly.

Let the casserole rest for 5 minutes before cutting and serving.
