Tender Oven-Baked Ribs Recipe: A Fall-Off-the-Bone Classic You’ll Crave

  • Author: Hannah

Ingredients

Scale
  • 23 lbs pork baby back ribs (or St. Louis-style ribs)

  • 2 tablespoons olive oil

  • 2 tablespoons brown sugar

  • 1 tablespoon paprika (smoked or sweet)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chili powder or cayenne (optional, for heat)

  • 1 cup BBQ sauce (store-bought or homemade)

Instructions

1. Preheat your oven:

  • Set to 300°F (150°C) for slow roasting.

2. Prepare the ribs:

  • Remove the silver skin from the back of the ribs (slide a knife under the membrane and pull it off with a paper towel grip).

  • Pat ribs dry with paper towels.

3. Season:

  • Mix brown sugar, paprika, garlic powder, onion powder, salt, pepper, and chili powder in a bowl.

  • Rub ribs with olive oil, then coat generously with the dry rub on both sides.

  • Wrap the ribs tightly in foil (meat side up) and place on a baking sheet.

4. Bake low and slow:

  • Bake in the preheated oven for 2.5 to 3 hours, until ribs are very tender.

5. Add BBQ sauce & broil:

  • Carefully unwrap the foil (watch for steam).

  • Brush ribs generously with BBQ sauce.

  • Broil for 5–8 minutes on high until the sauce is bubbling and caramelized. Watch closely!

6. Rest & serve:

  • Let ribs rest for 5–10 minutes before slicing.

  • Serve with extra sauce on the side.
