Tender Slow Cooker Garlic Butter Beef Bites with Potatoes – Easy & Flavorful Recipe

Ingredients

2 lbs beef stew meat (or chuck roast cut into bite-sized pieces)

1 ½ lbs baby potatoes (halved if large)

4 tbsp unsalted butter (melted)

6 cloves garlic (minced)

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp soy sauce (optional, for extra flavor)

1 tsp onion powder

1 tsp smoked paprika

½ tsp dried thyme

½ tsp dried rosemary

½ tsp black pepper

1 tsp salt (adjust to taste)

1 tbsp olive oil

1 tbsp fresh parsley (chopped, for garnish)


Instructions

Sear the Beef (Optional for More Flavor)

 

Heat olive oil in a skillet over medium-high heat.

Add the beef bites and sear until browned on all sides (about 3-4 minutes).

Prepare the Slow Cooker

 

Add the halved baby potatoes to the bottom of the slow cooker.

Place the beef bites on top.

Make the Garlic Butter Sauce

 

In a bowl, mix melted butter, garlic, beef broth, Worcestershire sauce, soy sauce, onion powder, paprika, thyme, rosemary, salt, and pepper.

Pour the sauce over the beef and potatoes in the slow cooker.

Slow Cook

 

Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is tender and the potatoes are cooked through.

Finish & Serve

 

Stir gently to coat everything in the sauce.

Garnish with fresh parsley and serve warm!
