Ingredients

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade)

½ cup salsa

1 ½ cups shredded cheddar cheese (or Mexican blend)

10–12 small flour or corn tortillas

2 tbsp olive oil (for brushing)

Sour cream, guacamole, or salsa (for dipping)
Instructions

Preheat oven to 400°F (200°C).

In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.

Stir in taco seasoning and salsa, simmer for 2–3 minutes. Remove from heat.

Place 2–3 tbsp of beef mixture and some cheese onto each tortilla. Roll tightly into taquitos.

Arrange seam-side down on a greased baking sheet. Brush tops with olive oil.

Bake for 15–20 minutes, until crispy and golden brown.

Serve hot with sour cream, guacamole, or extra salsa for dipping.
