Ingredients
2 tbsp olive oil
1 lb chicken breast, sliced thin
4 cups chicken broth
1 tbsp soy sauce
1 tbsp sesame oil
3 garlic cloves, minced
1 tbsp ginger, grated
2 packs ramen noodles (discard seasoning)
1 carrot, julienned
1 cup baby spinach
2 green onions, sliced
1 boiled egg, halved (optional)
Sesame seeds (for garnish)
Instructions
In a large pot, heat olive oil over medium heat. Add the chicken breast slices and cook until browned and fully cooked. Remove and set aside.
In the same pot, add garlic and ginger. Sauté until fragrant, about 1-2 minutes.
Pour in the chicken broth, soy sauce, and sesame oil. Bring the mixture to a simmer.
Add the ramen noodles and cook according to the package instructions (usually 3-4 minutes).
Stir in the julienned carrot and baby spinach. Cook for an additional 1-2 minutes until the veggies soften.
Return the cooked chicken to the pot to warm through.
Ladle the ramen into bowls, top with sliced green onions, and a boiled egg if desired. Sprinkle sesame seeds for garnish.
