The Best Fudgy Chewy Brookies (Brownies + Cookies)

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup semi-sweet chocolate chips

  • 3/4 cup granulated sugar

  • 1/4 cup packed brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup all-purpose flour

  • 1/4 cup unsweetened cocoa powder

  • 1/4 teaspoon salt

🍪 Cookie Layer Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup semi-sweet chocolate chips


Instructions

1. Preheat Oven:

Preheat oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper or grease it well.


🍫 Make the Brownie Layer:

  1. In a saucepan or microwave-safe bowl, melt butter and chocolate chips together until smooth.

  2. Stir in granulated sugar and brown sugar.

  3. Add eggs and vanilla; mix well.

  4. Sift in flour, cocoa powder, and salt; stir just until combined.

  5. Pour into the prepared pan and spread evenly.


🍪 Make the Cookie Layer:

  1. In a separate bowl, cream softened butter with brown and granulated sugar until fluffy.

  2. Beat in egg and vanilla.

  3. Add flour, baking soda, and salt; mix until just combined.

  4. Fold in chocolate chips.

  5. Drop spoonfuls of cookie dough over the brownie layer. Gently press to spread (doesn’t have to cover completely — it’ll spread in the oven).


🔥 Bake:

 

  • Bake for 30–35 minutes, or until a toothpick inserted comes out with just a few moist crumbs.

  • For fudgier brookies, bake closer to 30 minutes.

  • Let cool completely before cutting for clean squares (or dig in warm for melty magic!).
