The Ultimate Taco Stuffed Sweet Potatoes Recipe

Ingredients

  • 4 medium sweet potatoes

  • 1 lb (450g) ground beef or turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp taco seasoning (or homemade blend: chili powder, cumin, paprika, salt, pepper)

  • ½ cup black beans, drained & rinsed (optional)

  • ½ cup corn kernels (optional)

  • ½ cup diced tomatoes (or salsa)

  • ½ cup shredded cheese (cheddar, Mexican blend, or your favorite)

Toppings (Optional but Recommended!):

  • Sour cream or Greek yogurt

  • Sliced avocado or guacamole

  • Fresh cilantro

  • Sliced jalapeños

  • Lime wedges


Instructions

  • Bake the Sweet Potatoes:

    • Preheat oven to 400°F (200°C).

    • Wash and dry the sweet potatoes. Pierce them a few times with a fork.

    • Place on a baking sheet and bake for 40-50 minutes or until soft when pierced with a knife.

  • Prepare the Taco Filling:

    • Heat olive oil in a large skillet over medium heat.

    • Add onion & garlic, sauté until soft.

    • Add ground beef/turkey and cook until browned. Drain excess fat if needed.

    • Stir in taco seasoning, black beans, corn, and tomatoes. Simmer for 5 minutes.

  • Assemble the Stuffed Sweet Potatoes:

    • Slice the sweet potatoes open and fluff the flesh with a fork.

    • Fill each potato with the taco mixture.

    • Sprinkle with shredded cheese and let it melt.

 

  • Add Toppings & Serve:

    • Top with sour cream, avocado, jalapeños, and cilantro.

    • Squeeze fresh lime juice for extra flavor.
