4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and black pepper, to taste
For the pineapple salsa:
1 cup fresh pineapple, diced
1/4 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1 small jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
Salt, to taste
Instructions

Season chicken with salt and pepper.

Heat olive oil in a skillet over medium heat. Cook chicken for 6–7 minutes per side, or until golden and fully cooked.

Meanwhile, combine all pineapple salsa ingredients in a bowl and mix well.

Serve chicken topped with a generous scoop of pineapple salsa.
