For the Burrito:

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ cup nacho cheese sauce

  • 1 cup cooked rice

  • ½ cup sour cream

  • ½ cup shredded lettuce

  • ½ cup diced tomatoes

  • ½ cup shredded cheddar cheese

  • ½ cup shredded Monterey Jack cheese

  • 4 large flour tortillas

For the Grilled Cheese Topping:

  • ½ cup shredded cheddar cheese

  • ½ cup shredded Monterey Jack cheese

  • 2 tbsp butter (softened)


Instructions

  • Cook the Beef:

    • Heat olive oil in a skillet over medium heat.

    • Add ground beef, breaking it apart. Season with salt, pepper, chili powder, cumin, garlic powder, and onion powder.

    • Cook until browned, about 6-8 minutes. Drain excess fat.

  • Assemble the Burritos:

    • Lay a tortilla flat and spread a spoonful of nacho cheese sauce in the center.

    • Add cooked rice, seasoned beef, sour cream, shredded lettuce, diced tomatoes, and shredded cheeses.

    • Fold in the sides and roll tightly into a burrito.

  • Grill the Burrito:

    • Heat a skillet over medium-low heat.

    • Spread butter on the outside of the burrito.

    • Sprinkle shredded cheddar and Monterey Jack cheese on top.

    • Place the burrito cheese-side down in the skillet. Cook for 2-3 minutes until golden and crispy.

    • Flip and cook the other side until golden.

 

  • Serve:

    • Remove from the skillet, let cool slightly, and slice in half.

    • Serve with extra sour cream, salsa, or guacamole.
