Ingredients
For the Beef:
1 lb ground beef
1 packet taco seasoning (or homemade)
½ cup water
1 small onion (diced)
2 garlic cloves (minced)
For the Nachos:
1 large bag tortilla chips
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can (15 oz) black beans (rinsed and drained)
1 cup corn (grilled or canned)
1 jalapeño (sliced, optional)
½ cup diced tomatoes
½ cup black olives (sliced)
¼ cup green onions (chopped)
Fresh cilantro (for garnish)
For Topping:
½ cup sour cream
½ cup guacamole
½ cup salsa
Instructions
Prepare the Beef:
Preheat oven to 400°F (200°C).
In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess grease.
Add garlic, taco seasoning, and water. Simmer for 5 minutes until thickened.
Assemble the Nachos:
4. Line a large baking sheet with parchment paper.
5. Spread tortilla chips evenly on the sheet.
6. Layer with beef, black beans, corn, cheddar, and Monterey Jack cheese.
7. Add jalapeños, tomatoes, and black olives.
Bake:
8. Bake for 10-12 minutes or until cheese is melted and bubbly.
Serve:
9. Garnish with green onions and fresh cilantro.
10. Drizzle with sour cream and serve with guacamole and salsa on the side.
