4 cups cubed fresh watermelon
1/2 cup crumbled feta cheese
1/4 cup fresh mint leaves, chopped
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon honey (optional)
Salt and pepper to taste
Optional garnish: extra mint leaves and lime wedges


Instructions

  • In a large bowl, combine the watermelon cubes, crumbled feta cheese, and chopped mint leaves.

  • In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and pepper.

  • Drizzle the dressing over the watermelon mixture and gently toss to combine.

  • Garnish with additional mint leaves and lime wedges, if desired.

 

  • Serve immediately for the freshest flavor or chill for 15-20 minutes before serving.
