Ingredients
1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 teaspoon lemon zest
1 teaspoon lime zest
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon dried oregano or thyme
Salt and black pepper, to taste
Wooden or metal skewers
Fresh chopped parsley or cilantro, for garnish (optional)
Instructions

In a bowl, whisk together olive oil, lemon juice, lime juice, zest, garlic, honey, oregano, salt, and pepper.

Add chicken pieces to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

Preheat grill or grill pan over medium-high heat.

Thread marinated chicken onto skewers.

Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.

Garnish with parsley or cilantro if desired and serve hot.
