Zucchini Bread Energy Balls Recipe: A Healthy, Delicious Snack

1 cup old-fashioned rolled oats
1/2 cup finely grated zucchini (squeezed to remove excess moisture)
1/3 cup almond butter or peanut butter
1/4 cup honey or maple syrup
1/4 cup ground flaxseed or chia seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips or chopped walnuts (optional)
Pinch of salt


Instructions

  • Prep Zucchini:

    • Grate zucchini and squeeze out as much liquid as possible using a clean kitchen towel or paper towels.

  • Mix Ingredients:

    • In a large bowl, combine oats, flaxseed, cinnamon, nutmeg, and salt.

    • Stir in almond butter, honey, vanilla, and the squeezed zucchini until fully combined.

  • Add Mix-Ins:

    • Fold in chocolate chips or chopped nuts if using.

  • Chill Mixture:

    • Refrigerate the mixture for 20–30 minutes to firm up.

  • Form Balls:

    • Roll into 1-inch balls using your hands. Makes about 16–18 energy bites.

 

  • Store and Serve:

    • Store in an airtight container in the fridge for up to 1 week, or freeze for longer shelf life.
